The holidays are the ideal time to savor traditional dishes in the company of family and friends. In a world where “convenience is king,” we may sometimes avoid preparing meals from scratch. One reason to spend those extra 15 minutes in the kitchen using whole foods instead of pre-packaged items is to limit the amount of ultra-processed foods we consume. Over time — and especially during the holidays — emphasizing minimally processed foods can have big benefits for our overall health.
Join Collette Haw, a chef trained in holistic health, and Daria Igudesman, PhD, nutrition researcher and Registered Dietitian with AdventHealth’s Translational Research Institute, in preparing their whole foods renditions of a few holiday favorites. By attending this class, these appetizing recipes will inspire you to shop the perimeter of the grocery store and choose fewer pre-packaged items in the center aisles to nourish both your body and your spirit this holiday season.

This is a demonstration-style cooking program, so our in-person attendees should prepare to sit back, relax and let our chef prepare the meal while you enjoy the delicious items. All attendees, both online and in-person, will receive a booklet for the following menu: Crispy Walnut Maple Baked Apples with Oats; Kale and Roasted Cranberry Christmas Salad and Whole Grain and Lentil Turkey Pot Pie.

About the Presenters:
Chef Collette Keller is a classically trained Culinary Institute of America graduate. With a passion for seasonal, sustainable cooking, Chef Collette approaches her cooking with a passion for blending comfort-food-gone-healthy and ‘food as medicine’ philosophies. Chef Collette spent several years operating her own successful meal delivery service out of Longwood—Collette’s Clean Eats—and as a private chef to a celebrity family in Atlanta before launching Nourish Coffee Bar + Kitchen at the Center for Health & Wellbeing. For its first three years in operation, she created the café’s beloved seasonal menus. Collette is now focusing on nutritionally dense meals for postpartum mothers at The Hale Kitchen. As a new mom herself she found her calling in helping nourish mothers in their most vulnerable time of healing. Learn more at thehalekitchen.com.
Daria Igudesman, PhD, RD, is a postdoctoral fellow at the AdventHealth Translational Research Institute, whose work as a dietitian-researcher focuses on clinically actionable modes of co-managing weight and glycemia in type 1 diabetes, primarily through nutrition approaches. She received her doctoral and dietetics training in Nutritional Epidemiology at the UNC Gillings School of Global Public Health. One arm of her research considers the ways in which the intestinal microbiota and its signaling metabolites can be augmented through diet to improve health outcomes.
