Vegan Breakfast Tacos

Cooking with Collette, Season 1, Episode 11

Join Chef Collette as she makes some delicious vegan breakfast tacos with some plant based “eggs.” These are perfect for the whole family before a busy day in school or at work!

Serves – 4 people

Ingredients:
4 plant powered protein tortillas
1 large zucchini, cut in half
1 small onion, sliced
½ cup black beans
1 cup vegan eggs
½ cup vegan plain yogurt
diced cilantro
2 tsp taco spice

Directions:
1. Preheat grill to medium high heat. Once grill is preheated place the zucchini on the grill and grill each side until golden brown. Do the same thing for the onions, grill them until golden brown.

2. Once zucchini and onions are grilled small dice them and add the black beans with the 2 tsp taco spice.

3. In a non-stick skillet on the stove, heat to medium and scramble the vegan eggs with some salt and pepper.

4. Once the eggs are cooked, grill the tortilla, place eggs, zucchini mixture, and some cilantro and top with the plain vegan yogurt.
