Cooking with Collette, Season 1, Episode 13

Ingredients:
3 pounds of assorted vegetables
2 tbsp olive oil
2 tbsp white wine vinegar
salt & pepper to taste
1 tsp za’atar spice
Dip
¾ cup feta cheese crumbles
1 lemon zested & juiced
2 garlic cloves, microplained
¾ cup greek yogurt
1 tsp dried dill
½ tsp za’atar spice
¼ tsp cumin
salt & pepper to taste
Directions:
1. Slice all the vegetables about ½ inch thick and add to a large mixing bowl.
2. Toss the sliced vegetables with olive oil, vinegar, salt, pepper, and za’atar until all the vegetables are evenly coated. Preheat the grill on medium high heat.
3. Once the grill is preheated grill the vegetables until crisp tender.
4. While the vegetables are grilling you can put together the dip. In a medium sized mixing bowl add the feta, lemon zest and juice, garlic, Greek yogurt, dill, za’atar, cumin, salt and pepper mix well.
5. Place all the grilled veggies on a platter and put the dip in a small serving bowl and you are ready to serve this delicious appetizer or size dish!
