Cinco de Mayo is a great way to not only celebrate with family and friends, but to also celebrate the wonderful flavors of the Southwest. Food for Life Nutrition & Cooking Instructor, Debbie Zimmerman, demonstrates a flavorful Cinco de Mayo-inspired menu that includes quinoa taco salad, chipotle sauce, 5-minute salsa, and guilt-free flan!

About the Recipes Covered:

Quinoa Taco Salad: all the familiar flavors of a taco salad but made with quinoa. This dish will be served in a tortilla shell bowl but can also be plated as a regular lettuce taco salad.

Chipotle Sauce: everyone loves a creamy spicy sauce on their tacos – and this is the vegan version. Easy to make and can be stored in the refrigerator.

Quick 5-Minute Salsa: who doesn’t love salsa and chips? See how the salsa is prepared and learn how to easy it is to make homemade chips without the fat, sodium and guilt.

Guilt-Free Flan: everyone loves a sweet ending to a great Cinco de Mayo celebration. This Guilt-Free Flan is nicely sweetened with dates and pure maple syrup.

Debbie Zimmerman is a Food for Life Nutrition & Cooking Instructor through the Physicians Committee for Responsible Medicine. She holds certifications in Plant Based Nutrition, Lifestyle and Health Coaching as well as Personal Training and Group Fitness Instruction. Debbie specializes in weight and disease management.
