Cooking with Collette, Season 1, Episode 19

Ingredients:
1lb brussel sprouts, shaved
1 granny smith apple, julienned
¼ cup scallions, sliced
¼ cup pumpkin seeds, toasted
½ cup dried cranberries
¼ cup pecorino, grated
¼ cup celery, shaved
salt & pepper to taste
Dressing
1 small shallot, minced
1 tbsp dijon mustard
½ inch ginger, microplained
½ cup apple cider vinegar
¾ cup olive oil
½ inch ginger, microplained
salt & pepper to taste
Directions:
1. In a large Mixing bowl add the brussel sprouts, apples, scallions, pumpkin seeds, dried cranberry, pecorino, and shaved celery. Toss all ingredients gently and season with salt and pepper.
2. To make the dressing add the minced shallot, and garlic to a small mixing bowl. Add the Dijon mustard, and cider vinegar to the same bowl and allow to sit for 2-5 minutes. Whisk in the olive oil and season with salt and pepper.
3. Once the vinaigrette is made pour over the slaw and toss to coat. Enjoy!
