African Peanut Soup

Cooking with Collette, Season 1, Episode 21

Nourish Coffee Bar + Kitchen’s Chef Collette shows us how to make African peanut soup. A Nourish Coffee Bar & Kitchen favorite and hearty soup that will get you in the mood for fall!

Ingredients:

2 tbsp. olive oil
2 tbsp. curry powder
2 medium onions, julienned 
1 tbsp. garlic, minced
2 large sweet potatoes, peeled 3/4 inch dice
1 quart low sodium chicken broth
1 (14 oz) can whole tomatoes, drained and quartered 
1 tsp salt
1/2 tsp black pepper
1 tsp cayenne pepper
1 cup smooth peanut butter 
10 oz unsweetened coconut milk
 1 lb cooked ground turkey
 
Directions:

1. Heat the oil in a large stockpot over medium high heat. Add curry powder and cook, stirring constantly for about 1 minute.

2. Add onions and cook until softened. Add garlic and cook until softened. Stir in sweet potatoes, chicken broth, and tomatoes, and bring soup to a boil. Reduce heat and simmer partially covered, 20 to 30 minutes. 

3. Add the salt, black pepper, cayenne, peanut butter, cooked ground turkey, and coconut milk to the soup, stirring to combine. Bring mixture to a simmer and cook for 20 minutes. Adjust salt and pepper as needed before serving.
