Cooking with Collette, Season 1, Episode 1

Serves 4
Ingredients:
8 tortillas
1 lb Chicken Breast, Ground
4 cloves garlic, microplaned
1 tsp cumin
2 tsp chili powder
½ tsp paprika
¼ tsp chipotle powder
1 lime, zested
1 lime, juiced
Salt & Pepper to taste
2 tbsp avocado oil
Directions:
1. Heat the avocado oil in a saute pan. Once the oil is heated add the ground chicken, garlic, cumin, chili powder, paprika, chipotle powder, salt and pepper and cook the ground chicken until cooked through and golden brown.
2. Once the chicken is cooked add the lime zest and juice.
3. Serve in the tortillas and top with pomegranate salsa & garnishes
Pomegranate Salsa
Ingredients:
1 pomegranate, with jewels removed
¼ cup shallot, minced
1 jalapeno, minced with seeds removed
½ bunch cilantro chopped
Salt & Pepper to taste
1 small avocado, diced
1 lime, juiced
1 lime, zested
1 tbsp avocado oil
Directions:
1. Take the jewels out of the pomegranate and place in medium sized mixing bowl.
2. Add the minced shallots, jalapeno, cilantro, and avocado to the bowl with the pomegranate jewels.
3. Zest and juice the lime into the same bowl, add the avocado oil and season with salt and pepper.
Garnish with Scallions, Queso Fresco, Lime Wedges
